The Kamado Joe is an ancient, Asian-style grill. They feature a thick-walled, heat-resistant shell that locks in smoke and moisture at any temperature. Kamado Joe’s Charcoal

Great grilling and smoking comes down to one simple measure of success – flavour. An easy way of achieving mouth-watering and smoky flavours is with Kamado Joe’s charcoal.
Working with Argentinian charcoal masters, they developed an exclusive blend of three hardwoods that are so legendary for their density, they’re called ‘Axe-breakers’ by the locals. It’s then roasted in traditional outdoor ovens to create the World’s largest and finest lump charcoal. They know that charcoal is the very essence to a great outdoor cooking experience, so they have created their own all-natural charcoal that burns longer, cleaner and better.

Cooking on the Kamado Joe
The fire within a blaze-red Kamado Joe isn’t just an ideal way to slow-roast, smoke and sear. It isn’t just a perfect way to cook moist, delicious meat, charred vegetables and crispy pizzas. It’s also a remarkable way to relax, a powerful way to reconnect with family and friends and it is a genuine, rewarding way to rekindle the simple pleasures of cooking with fire.
Having a very spacious design, you are able to cook more food than in a standard charcoal kettle barbecue. With a variety of different cooking surfaces available, you can make your own personal grilling experience.
Over the years, the range of grill sizes has expanded, and they currently have a selection of Kamado’s in various sizes. Anything from a portable Kamado the ‘Joe Junior’ at only 52cm wide – perfect for camping and picnics, right up to the ‘Big Joe’ which has a cooking surface of a whopping 2923 Sq cm, fantastic for garden parties and events.
Kamado Joe Start Up Guide
Here’s a quick starting up guide for the best results when using your Kamado Joe.
Starting it up:
- Add charcoal to firebox and light using one or two fire starters.
- Leave dome open for 10 minutes with the bottom vent fully open.
- Close the dome.
- Begin closing the top vent and bottom vent when the dome temperature is within 50°F of your target.
Maintaining temperature:
To lower the temperature, decrease the airflow through the grill by closing the vents. Conversely, raise the temperature by opening the vents. Adjustments to the vents are not immediate; allow 10-15 minutes for a vent change to take effect. Because you ceramic Kamado Joe retains heat so well, it can take some time to fully heat. Give your grill 20-40 minutes to an hour to stabilise the temperature before you start cooking.
Cooling it down:
- When finished cooking, close the bottom vent completely.
- Once the temperature falls below 400 °F, close the top vent almost completely, but leave a small crack.
- Do not cover the grill until the dome is cool to the touch.
