Delicious BBQ Chicken Kebabs Recipe

To celebrate National BBQ Week here is a delicious chicken kebab recipe made even tastier when cooked on the BBQ!

These mouth watering chicken and halloumi kebabs are marinated in a lemon and herb sauce to give them an extra flavour kick, mixed with that unmatchable smokey charcoal taste from the BBQ, the family won’t be able to get enough. They’re really easy to make with only 10 minutes preparation and 20 minutes cooking time.

Chicken kebab on the BBQ

Ingredients:

  • 2 chicken breasts
  • Pack of halloumi cheese
  • 2 courgettes
  • 1 pack of cherry tomatoes
  • 1 onion
  • 1 tbsp olive oil
  • Juice from 1 lemon
  • Mixed herbs

1. Firstly cut the chicken, halloumi, courgettes and onion into cubes, thick enough to thread onto a kebab skewer.

2. Mix together the olive oil, lemon juice and herbs, then take all theĀ ingredients, place in a bowl and cover with this dressing (if you have more time this can be left to marinade in the fridge for an hour to really lock in the taste).

3. Take eight skewers and thread all the ingredients on evenly. Place on a preheated BBQ and cook for 15-20 minutes turning continuously until all of the chicken is cooked thoroughly and the ingredients are a delicious golden brown/charcoaled colour.

How to Serve

To make the perfect BBQ meal, serve the kebabs with warm pitta breads heated on the BBQ, corn on the cob, fresh salad and a mint yogurt dip.

Place directly on the BBQ grill, turning continuously for approximately 10 minutes until cooked. The outside should turn a black charcoaled colour as this locks in the great BBQ taste. You can also sprinkle with black pepper or smother with butterĀ before serving.

Mint Yoghurt

To make a deliciously refreshing mint yoghurt dip, use a carton of natural yoghurt and mix with chopped mint leaves and a teaspoon of lemon juice. This goes perfectly with fresh salad.

Pitta bread

Before serving the meal, place the pitta breads on the grill for one minute each side to heat through.

Now you can enjoy this delicious BBQ recipe throughout the summer, and you can even try experimenting with the ingredients, as lamb or beef kebabs are just as delicious, with any combination of your favourite vegetables.
